So I tried taking pics to show just how it looks, since the paint is even at all. I don't know if the paint is bad or if it's me, probably both. But I gotta say after the first coat I don't feel much like going further. Maybe some tips on how to fix it? Probably should ask for photo taking advice as well, but one disaster at a time....

ok bro. yes please skip the cheap paints. get some citadel paints. now whenever you paint with white it's a bitch so be prepared to do multiple coats...for example i'm on my 3rd coat of white for a fantomex custom i'm working on.

if you can't get citadel paints testors model acrylics are ok..not great but will get the job done.

The white I have came out in chunks. Is that what you mean? Or is it just hard to get it a nice thick consistency?

the white will be thin and requires multiple coats. it should not be chunky. i use citadel skull white.
