Essentially diffusion softens your lights and prevents the reflective "hot spots" on your subject. They are like sheets of tracing paper, except heat resistant. Usually clothespins are the best way to secure them to a light source, but tape works too.

Gels are specifically colored sheets of plastic which allows you to pick up unnatural colors in a more organic way. Like, shade everything green with a green sheet, etc.

I am no master myself, but just a few tricks I have picked up.

So, essentially the same as acetate, but expensive and more durable? Yeah, last week I spoke to an associate at a mom & pop photo store/studio/school and that's what they shared. I looked at both gels and sheets and the $27 and $34 respectively seemed exorbitant for what I was already achieving with acetate.
