Saw it on Saturday, and I thought it was great. I don't think the ending was a let down at all. To use your roller-coaster analogy, Dr. Kain, do you expect a sudden, abrupt stop at the end, or one that slowly coasts to a gentle stop before letting you out?
I felt there were enough twists and turns to keep me entertained throughout the film (especially the end credits sceen). About the only thing that I *might* have an issue with is some of Tony's epilogue at the end that wrapped up Pepper's issue and basically eliminated Tony's shrapnel problem. But the seed was already planted about Stark having already figured out the flaw in Extremis 13 years prior (and while drunk, too).
I also didn't see a problem with the handling of Tony's PTSD. They didn't say he was completed cured, but he did find better coping mechanisms for dealing with it. Besides, his ego probably beat it into submission anyway ("This brain ain't big enough for the both of us, pilgrim").
IMHO, Iron Man 3 fits in well with the two previous films and Shane Black definitely followed Favreau's lead in style, tone and character development. I honestly loved Ben Kingsley in this and I thought the filmmakers did a great job adapting the Mandarin for the big screen. Guy Pierce was great as well.
I hope that if there is a 4th Iron Man, we will see a proper Rescue and a new War Machine.
