Collecting Star Wars toys can be quite a commitment, depending on what you have in mind. I used to collect really hardcore back when the 1995 Power of the Force line debuted. I also bought two of every single pack figure (opened one, stored the other) for a number of years.
Then one day I decided that it just didn't appeal to me like it did when I first started. There were so many figures (some of the same ones done multiple times with new sculpts, accessories, etc) that I began to run out of space to keep them.
It didn't help that pricing on them, as others here have mentioned, weren't all that spectacular. New toys are manufactured in such high numbers these days, that the supply is usually more than enough to meet the demand and prices in the secondary market tend to reflect that.
So I got out of collecting Star Wars hardcore and now only buy figures here and there that I like, which usually involves the characters Darth Vader, Luke and Yoda.
Personally, if you're going to get into the collector's market on any toy line, there are some rules you should follow:
1. Be passionate for whatever lines you collect. If you don't like the source material or the toys themselves, what's the point? If your only goal is to make money off them, you'd be better off opening a toy store than starting a collection.
2. Whether you open them or not is entirely up to you. If you want to open a toy, then go for it. If you want to keep it sealed, that's your decision too. Don't worry about what others might think. It's your money, your collection, your choice.
3. Set specific short-term and long-term goals for your collection; don't try to go all out at once, especially with Star Wars or other long-running toy lines. There's just too much product and it can overwhelm you. Try to avoid thinking "I gotta get them all" (even if what you collect is Pokemon). Start with a narrow focus like a specific character, team, sub-line, packaging style or even just a single wave.
4. For older toys, be smart with your money. Shop around and make sure you have a good idea on what a toy is worth in the secondary market.
5. Be patient. Some collections can take a long time to build. Doubly so if it involves vintage, rare or exclusive items.
6. Remember that you decide when your collection is complete. Try not to fall into the open-ended collection abyss. It's not pretty down here.

I cannot stress this enough. Enjoy your hobby, because that should be the main (if not only) reason you get into this. If it ever starts to feel like something you
have
to do instead of something you
want
to do, then it may be time to think about quitting.
I hope my ramblings have at least helped you a little in some way. Star Wars collecting can be a lot of fun, but it can also be very demanding at times. Enjoy whatever you decide to do - that's the best advice I can give.
EDIT: I open just about everything. Sometimes I will keep the packing and re-box certain toys (usually exclusives with resealable packaging). For certain characters, I might even buy one to keep MISB/MOSC and one to open. But nearly all of my collection has been opened because that's how I choose to enjoy it.
