On the Erik Nagel show, Randy explains why they aren't doing Pacific Rim 2. Essentially, NECA did well enough with the 1st film, but it wasn't earth shattering numbers. When the studio approached them for the sequel, they wanted more money for the license, even though they were slashing the budget for the 2nd film. Combine that with no del Toro and tt no longer made financial sense.
As for Godzilla & Kong, while Legendary is producing/distributing both Kong and Godzilla, they are not owned outright by Legendary. Toho owns the rights to Godzilla and licensing deals for that character must be made with them. Universal Studios is the owner of Kong, and any deal to produce his character must go through them.
