For X-Men, there is the Claremont run (1970s-1990s) that I previously mentioned. For more modern X-Men comics, you could try Grant Morrison's New X-Men (the first couple TPBs at least) and Joss Whedon's Astonishing X-Men. Not sure what to tell you about Wolverine as I don't really read his solo comics.

Spiderman can be a little tougher when looking at the older issues. Older comics from the 1960s can be hard to read (boring, weird, lame, disproven science, etc.) so you may want to read a couple of issues before purchasing anything. Spiderman's early issues are better than some but they're still from the 1960s. You may want to look for origin stories for your favorite villains. Same applies to the 70s and 80s. I haven't read anything from the 90s so I'll leave that to someone else. I wish I could recommend something from when Peter and MJ were married but Marvel was trying to split them up in the early 2000s, even before the One More Day storyline which I've heard was pretty bad. Post One More Day, I would start with the story Big Time, where Peter gets a job working for Horizon Labs. It was written by Dan Scott who has been writing Spiderman for the past few years and he's done a great job.

I may have to start somewhere else with Moon Knight, I am just now getting into the character, I know very little about him. It would be nice to start at his origin.

You can get digital comics from either Comixology, Amazon, or Marvel Unlimited. Amazon actually owns Comixology but I think the Comixology app and website are much more user friendly. Comixology runs sales every week. Marvel sales are on Mondays and Friday but they may go through the week or the weekend if a MCU movie or Netflix series is about to come out. Starting on Tuesdays they'll pick a different publisher and run that sale through the week.

Marvel Unlimited is a streaming service where you can read as many comics as you want each month. You can pay $10 a month or $70 a year. They also have an Unlimited Plus subscription where you get extras like an exclusive Marvel Legends figure.
