Different teams have different people working on them. It’s only natural that things would turn out differently. It’s like when Mattel had the 4 Horsemen working on DCUC and The Dark Knight Movie Masters, but then they had a different team make the Green Lantern Movie Masters. They were DC figures from Mattel but they were clearly different from the figures made by the 4H.
You also have to factor in what brand owners want in terms of articulation and scale. For example, Lucasfilm doesn’t want a lot of exposed articulation. That’s why most Black Series figures have single jointed elbows and diaphragm joints. And it looks like they may be switching to single jointed knees soon, assuming Dooku is a sign of what’s to come.
