I think it can really boil down to:

The specific people managing the Star Wars license, particularly as it pertains to populated lines of collector-oriented stuff like Black Series or Hot Toys, seem to want all the characters from live-action, animation, games, etc. to be able to cohesively fit together in a collection and not have stylistic clashes, thus animated characters getting realistic likeness in Hot Toys and Black Series.

Meanwhile, the people managing the Marvel license, particularly as it pertains to collector-oriented stuff, seem to want to have the animated stuff looking like the animation and representing it accurately and being its own collection separate from the MCU or comics etc. stuff, and not particularly worrying about them fitting in with other Marvel stuff, thus having Marvel Legends and Hot Toys figures for not only the What If...? series, but also Into The Spider-Verse, actually stylized like in their respective animations.

Basically, the Star Wars licensors seem to have a "one cohesive large collection that can interact with each other without stylistic clashes" mindset, while the Marvel licensors seem to have a "multiple separate small collections within the same larger lines, no need to make them stylistically consistent" mindset.
