The redeemed villain is a classic storytelling plot and it always gives the that character a far greater depth than any straight arrow could ever have.
That, and I like that Emma considers lingerie an on-duty uniform, as opposed to Jean and her jumpsuits.

Diamonds can be scratched by other diamonds, and be cut as well. Also, most common diamonds can be smashed with an ordinary hammer. And the melting point of diamond is 3550 degrees C (6442 degrees F), which can be produced by Human Torch or Sunfire (with a little effort).
Granted, Emma's crystalline form is "diamond-like", so it may not actually possess the same properties as the actual mineral.
