Tough question(s), but I'll give it a shot. Best if I break it down a bit, though. And for the sake of brevity, I'm going to limit this to just North American series.

The original Classics line from 2006 isn't available at retail anymore (except through the secondary market) and most figures from that line will cost you a pretty penny to acquire now. But they're basically the modernized version of the G1 characters. There are also several other lines that have come out since which are sort of like sequels to Classics. Those series are: Universe "2.0" (2008/9), Generations, Hunt For The Decepticons and Reveal The Shield. Both HFTD and RtS blend the movie and Classic aesthetics for some figures, but there are excellent representations of G1 characters too.

The Dinobots haven't been re-released in a long time. AFAIK, there were some E-Hobby releases a few years back, but nothing since. Articulation on the original toys was pretty limited (swivel shoulders only, though some had knee joints due to their transformation).

If you're a fan of the Dinobots, I highly recommend Masterpiece Grimlock. He was a 2010 TRU exclusive and a great toy. The issue now is he might be expensive to acquire since it's been a year and a half since his release. There's also a Japanese version that comes with different accessories but it would be equally expensive.

There have been other Dinobot-related toys over the years - some good, some bad. There were some from the Beast Wars era, some during RiD and Armada, the Energon Grimlock/Swoop set (not as good as it sounds), the Classics Grimlock, Classics/Universe minicons, PCC Grimstone, and the aforementioned MP. Our sister site TFW2005.com (link at the top of this page) has a wonderful Resource Database that can help you get the low-down on all things Dinobot related (including the actual character Dinobot).

My first recommendation would be to try to pick up the Generations/HFTD/RtS toys while some are still in stores and others are still relatively affordable. Then start working backwards to older Generations/Universe toys. Also be on the lookout this fall when Fall of Cybertron toys are released. Especially the new Bruticus combiner.
