I know exactly what you mean, for me all my IM figures have their arms by their side, with the head hanging down, as if they've just been shut off, then I have a Tony Stark custom up front in his spiffy Armani suit, holding his mark 3 mask. I do have a custom hulkbuster with an exposed face, but the rest all have their masks on. And yes the hands and head both pop out without any hassle, and the hand pegs are the same dimensions as almost any removable hand used by IM, so you can swap it out for others.
