I'd say Zemo was quite fun, and Enchantress. I'm sure Spader will be good but EMH Ultron was a stand out. Purple Man was a nasty piece of work, and Ross Rulk was amazing.

As far as I know, that's actually a Fox workaround they can use. Marvel has the animated rights for mutants/X-men, just not the live action rights. So it would be an interesting way to work in some mutant/x-men stories that take place in the MCU.

I was under the impression Fox only owned cinematic rights, and had to go to Disney to ask to do the X-Men tv show they had planned?
I don't think Disney/Marvel would have any reference to X-Men, mutants or the F4 until they have the film rights firmly within their grip.
