I think with Cap and Iron man, the masks come off so much to show the actors. really you wouldn't even need RDJ in the suit if you kept the helmet on. And as far as Thor goes, a winged metal skull cap is not the easiest thing to keep on your head during battle, or walking, or looking up. It looks cool as hell in comics and animation, but the real life practicality would be insane, especially when your skull is strong enough to take a punch from the Hulk. I think the General idea behind a helmet is for it to be stronger than your dome.
