This actually could be a case of Disney trying to squash the post-ROTJ EU specifically. For all we know she was highly demanded but the powers that be had her removed since she directly clashes with their new narrative. Disney seems to be at least tolerant of KOTOR stuff since they're willing to work with it and haven't shut down TOR though I imagine they could have.
