Maybe clear mineral oil could work. I know it's popular for submerged computer rigs because it's non-conductive and non-acidic. Distilled water is cheaper and easier to get your hands on.

Been researching. Mineral oil is perfect in every way except it'll eventually go rancid, and frankly, that would be the time I'd knock the thing over.

A friend recommended distilled water with a splash of radiator inhibitor oil, so I'm gonna see if there's any downside to that online...
