If you just want to read some B-movie dumb fun then Apocalypse vs Dracula is entertaining. Messiah War is an alternate future story in which Apocalypse gets to play a different role. Lastly, he's not actually physically present for most of it but pretty much all of Uncanny X-Force from Rick Remender revolves around Apocalypse and the fallout of actions related to him.
